Strawberry gazpacho with razor shells

Helps you watch your waistline.

Razor shells are rich in protein, minerals and vitamins, with hardly any fat.

They are very nutritious and non-fattening.

This dish is ideal for slimming diets.

Ingredients
  • 1 kg of ripe large strawberries

  • 60 gr. red pepper

  • 35 gr. peeled red pepper

  • 20 gr. onion

  • Half a peeled cucumber

  • 100 gr white bread without crust

  • 15 ml Sherry vinegar

  • 150 ml olive oil

  • 200 ml water

  • Salt

  • a pinch of sugar

  • 3 tins of Cuca razor shells

Preparation

Peel the red pepper and the cucumber, removing the seeds.

Blend the vegetables, strawberries and remaining ingredients, except the oil.

Then slowly add the oil, until the mixture is smooth.

Add salt to taste.

To serve: pour into soup plates and place the razor shells in the middle. Add a fine drizzle of olive oil.
